I am falling in love with Singapore noodles ,so i hunted for the recipe.
And here i'd like to share it with u all...
'' SINGAPORE NOODLES''
and here what we needs :
- 500g large tiger prawn or any kind of prawn),peeled and deveined
- 3 garlic cloves,crushed
- 1 tsp finely grated fresh root ginger
- 1 onion, thinly sliced
- 1 carrot, cut into matchstick
- 200 g sugar snap peas,thinly sliced
- 50g bean sprouts
- 1 -2 tbsps curry powder ( medium or hot as u like)
- spring onions,thinly sliced
- 250g dried fine stir-fry rice noodles ,cooked and drain well
- dark soy sauce ,sweet chilli sauce
- 2 red chillies, deseeded and thinly sliced , to garnish salt and pepper
Methods :
- stir-fry prawns for 4 to 5 minutes until the prawns turn pink, then put aside
- stir-fry garlic and ginger for about 30 seconds. add the onion,carrot ,sugar snap peas and bean sprouts,stir-fry until soft,then ad curry powder and spring onions ,cook,strirring awhile
- then add the prepared noodles with the measurement water and toss everything together.stir in the soy sauce and sweet chilli sauce ,season with salt and pepper,keep stir- fry for a further minute.add the prawns in with the juices and tos through the mixture.
for noodles and vegetables soup :
- stir-fry 1 tsp grated fresh root ginger and thinly sliced red chilli ,then add 1 litre vegetable stock and bring to simmer.add 200g thinly sliced shiitake mushrooms and 1 julienned carrot,season with light soy sauce, dark soy sauce and rice vinegar.mix 1 tbsp cornflour with 2 tbsps cold water,stir into the soup and cook about 3 minutes until thickened.then stir in 50g bean sprouts and sliced spring onions and heat through.
- ladle over the noodles and it's ready to serve.
